Coptic stitch is one of my favourites, as this type of binding has an open spine, leaving the beautiful stitching on view.

These A5 hard back notebooks are bound using coptic stitch and covered in beautiful paper.
They have been sewn using very sturdy cotton and are ideal for use as sketch pads or journals, as the stitching of the spine allows them to lie open completely flat.
I have a variety of covers to choose from. Two are covered with brown leaf patterned paper from Florence, and have off-white paper insides. Another beautiful Florentine paper leaf pattern, using blues and golds, has white sketch paper insides; and I have one poppy paper design available, again with sketch paper insides.
