When a couple is in love, we use to call them "Tortolitos", it is because turtle doves find a partner for the rest of their life and if some of them died, they will never be with another bird. Turtle doves and weddings are a perfect match: these birds have often had romantic associations, and in poetry they're usually connected with fidelity and trust. Roman deity Fides was often pictured holding a turtle dove: she was the goddess of good faith (as in the Latin term bona fide)
