For the hard of seeing, this says: “I only drink champagne when I’m happy, and when I’m sad. Sometimes I only drink it when I’m alone. When I have company, I consider it to be obligatory. I trifle with it if I am not hungry and drink it when I am. Otherwise I never touch it. Unless I’m thirsty”.

I love this quote (and yes, it does apply to Real Ale too), yet despite being brought up on a north London cul-de-sac, I happen to like many a libation devised via the ‘methode champenoise’. (Okay, I like Cava). Don’t we all? Lily Bollinger did too, and she did it with aplomb, a device for measuring the fizzy depth of the best champers. I’m not saying you can’t beat British real ale, it’s just that there’s a time and a place for everything. And champagne, as Lily so eloquently puts it, is marvellous 24/7. Anywhere.
