Fill the steaming chamber with warmed stock, beer, wine, herbed water, apple juice, whatever liquid you prefer.
Plonk a 3--4.5lb chicken over the centre cup as in the picture.
You can put some vegetables under the chicken as well.
Rub a bit of olive oil or butter over the skin and bake uncovered for about 90 mins at 180 C.
The liquid in the cup will steam the chicken from the inside and the skin will turn out deliciously crisp.

I threw this dish on my pottery wheel using strong white stoneware clay and finished it in a combination of two lovely dark green reactive glazes
